Matt Darcy teaches an essential beginners drill. Jiu-Jitsu 101 teaches how to escape mount, break the closed guard, pass the guard and transition form side control to mount. This is a cyclical drill that you can do with a partner. If you have more experience you can mix and match the techniques as long as you follow the template.
